Black Forest Cake
Not only to be found in the Black Forest
To be honest ... you'll find this specialty in every corner of the country, in virtually every café and restaurant - and even also in a lot of cake shops in India and around the world.
"Schwarzwälder Kirschtorte", as it is called her in German, is a popular cake.
But pay attention: one of the essential ingredients in Germany is "Kirsch", a cherry schnapps, made usually from locally picked fruits.
Recipe
Ingredients: 4 eggs, separated
1/4 teaspoon salt
200g caster sugar, sifted
120g plain flour
1 tablespoon cocoa powder
1/2 teaspoon cream of tartar
1/4 teaspoon bicarbonate of soda (baking soda)
cherry compote
ganache
kirsch-flavoured creme chantilly
Assembly:
50ml kirsch, for brushing cake layers, cherries with stem, drained well, for decoration and chocolate curls for decoration
Preparation:
Spread the bottom short crust pastry base with a layer of jam, followed by the cream and some of the cherries.
Place the chocolate flan base (split horizontally) on top and sprinkle with Kirsch.
Next, spread the rest of the cream and the cherries in a layer.
Place the second chocolate flan base on top and cover with the gelatine-stiffened cream.
Coat the edges with the remaining cream.
Finally sprinkle the cake with the chocolate flakes (like in the picture) and place each of the cherries on a little mound of cream. Some say, it has to be 16!
